Soy protein powders and isolates are soy protein that has not been extensively hydrolysed: large molecules at low cost, usable only once the organism secretes proteases, which suits protease-producing strains such as Bacillus and large, long industrial fermentations, and they can replace soy milk to avoid batch variation and spoilage.
